The Corfu cuisine is Mediterranean, based in olive oil. On Sunday, on the family table was served meat, that day were able to serve it and of course the Easter, days of Christmas and official holidays.

The official food was the Pastitsada, you can make it with Rooster or  Calf, the materials that you can use for the sauce are: onions, garlic, red wine, olive oil, tomato paste, red pepper, black pepper, cinnamon, bay leaves, cloves, salt. After browning the meat and onions, extinguish with wine and then slowly add all ingredients and simmer. Serve with Kraft spaghetti.

 Other favorite dishes of Corfu were the Sofrito: Beef slices in saucepan with white sauce, white pepper, parsley and garlic, served with fresh fried potatoes or rice.

The Stew: rabbit or calf with whole onions, red pepper, vinegar, allspice, etc.

Mousaka: is oven’s food with fresh minced, eggplant, potatoes and sauce.

Except from the foods of the holidays, there were the daily foods as the bitter orange salad, bitter orange cut with pepper, olive oil, olives, salt and oregano.

Fast foods without many materials and good taste: Tsigareli: greens sautéed with fresh garlic, onion, hot pepper, tomato paste, salt, parsley, fennel, etc.
